5/ Cottage Cheese Stuffed Bell Peppers:
Ingredients:
2 bell peppers (any color)
1 cup cottage cheese
1/4 cup chopped cucumber
1/4 cup chopped tomatoes
1/4 cup chopped red onion
Fresh herbs (such as basil or parsley), chopped
Salt and pepper to taste
Instructions:
Cut the bell peppers in half lengthwise and remove the seeds and membranes.
In a bowl, mix cottage cheese, chopped cucumber, tomatoes, red onion, fresh herbs, salt, and pepper.
Spoon the cottage cheese mixture into the bell pepper halves.
Serve immediately or refrigerate until ready to serve.
