Ingredients:
For Puris:

2 cups whole wheat flour

1/2 teaspoon salt

Water (as needed)

Oil (for deep frying)
For Masala Topping:


1 cup boiled chickpeas (chana)

1 cup boiled and mashed potatoes

1/2 cup finely chopped onions

1/2 cup finely chopped tomatoes

2 green chilies, finely chopped

2 tablespoons chopped fresh cilantro (coriander leaves)

1 tablespoon tamarind chutney

1 tablespoon mint chutney

1/2 teaspoon chaat masala

1/2 teaspoon roasted cumin powder

Salt to taste

For Garnish:


Sev (crispy fried gram flour noodles)

Chopped fresh cilantro (coriander leaves)

Instructions:
Puris:

a. In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead the dough until it becomes smooth and firm.

b. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

c. Divide the dough into small lemon-sized balls. Roll each ball into a thin circle (approximately 3-4 inches in diameter) using a rolling pin.

d. Heat oil in a deep frying pan or kadai over medium-high heat.

e. Carefully slide the rolled puris into the hot oil and fry until they puff up and turn golden brown. Flip and fry the other side as well.

f. Remove the puris from the oil and place them on a paper towel to drain excess oil. Set aside.

Masala Topping:

a. In a mixing bowl, combine the boiled chickpeas, mashed potatoes, onions, tomatoes, green chilies, cilantro, chaat masala, roasted cumin powder, and salt. Mix well to combine all the ingredients.

b. Taste and adjust the seasoning if needed.


Assembling Masala Puri:

a. Take a puri and make a small hole in the center using your thumb.

b. Place a spoonful of the masala topping on the puri.

c. Drizzle some tamarind chutney and mint chutney over the topping.

d. Sprinkle some sev and chopped cilantro on top for garnish.

e. Repeat the process for the remaining puris.


Serve Masala Puri immediately as a delicious snack or appetizer.
