Khichuri is a delicious dish. My very favorite….In these stormy-rainy days sometimes we have khichuri in our house, so in today’s menu I am bringing delicious nutritious vegetarian mung dal khichuri recipe.

Khichdi recipe Green moong dal

Let’s see how to make vegetarian mung bean khichuri with few ingredients…


Materials:-

Govindbhog rice – 200 grams.

Moong dal – 200 grams.

Karaishunti – 100 grams.

Tomato – 1 t.

Potatoes – 2

Cauliflower – 1/2 t.

Badhakopi – 1/2 t.

Carrot – 1 t.

Panchphodan – 1/4 tsp.

Bay leaf – 1

Dry chillies – 2 t.

A little ginger and cumin batter.

Chilli, salt – to taste.

Preparation Method:-

To prepare khichuri, first wash and drain the rice well. Heat the kadai and fry the dal till the dal emits a nice aroma is When the dal is fried, wash it with water and drain it.


Now lightly fry the chopped vegetables in a pan with a little oil. Now boil water in a pot. You can put in the vegetables…potatoes and cauliflower carrots, cut into small pieces, then in the same pan in which you fried the rice, heat another 15 grams of vegetable oil.

Fry the potatoes in that oil till the potatoes turn golden brown.

Then remove the potato pieces from this oil and keep aside….!!


When the water starts to boil, add the rice and dal and mix everything except the curry leaves, green chillies, salt and a little turmeric.


And keep stirring every now and then otherwise the khichuri will stick to the bottom of the bone. Once it is cooked, remove it from the pan. Then heat a little oil in another pan and add bay leaves, dry chillies, bay leaves, ginger and cumin seeds. Now shake it a little and put it in the khichuri and add a spoonful of ghee and mix it well. Then our vegetarian vegetable khichuri is ready.

Benefits of Khichuri: Vegetable Khichuri is rich in fiber, antioxidants, carbohydrates, proteins and several minerals that improve digestion. Mung bean khichdi helps in weight loss indirectly as it keeps the stomach full for a long time.


Is Khichuri good for health: Eating Khichuri is healthy as rice and pulses together are a superior source of protein. Pulses are high in protein, but also lacking in lysine, a type of protein.


Does eating khichdi increase weight: Khichdi made of any type of dal is a balanced food rich in fiber, low in calories and fat, easily digestible…..!!
